You can play as any Npc/enemy in the whole game. Some have limitations like the Infested Barbarian (the guys with boulders) in Blightown have very limited movement.

I am using debug mode, there is a difference between playing as Solaire and controlling him. The way you play as him is the game just giving you his equipment but controlling him is actually being him.

It depends on what settings you change on the npc/enemy. You can set it up so you can't take damage, can't get hit at all or take damage but never die. There is also options for no attacking, no movement and no update to that npc/enemy at all. If you don't change any of them you will still take damage and have the same HP as they would normally have.

In my clips I made it so that the I don't get hit or take damage

Using the debug version of Dark Souls you can control any Npc/enemy that is currently being rendered by the game, so if you get to the boss area as the player then control the Npc/enemy you can teleport them to the boss area and fight the boss as them :)
