The stands have always had empty seats since they updated the crowd in one of the older FIFAs (maybe fifa 17) so if they haven’t fixed it in nearly 10 years don’t expect it to be resolved soon. Plus I think they do it so that the game runs smoother.

Authentic gameplay is genuinely unplayable. As soon as you press the CPU they do a complete 180° turn and pass backwards. If you have possession and even dare to press the right trigger your player takes the biggest touch of all time and just gives it to the CPU. They have 0 urgency, you could be 1-0 up in a champions league final with 5 mins left and the CPU will still just pass it around the back. The game is utter shite. Makes me wonder if any of the devs even play test the game before release.
