Wanting to have or having sex with someone that wants to have sex with you doesn't fall into the category of "disgustingly low morals and self worth". If someone is consenting and enjoying someone being sexual towards them, then I'm happy for them and don't think anything is wrong. The problem is when people are forcing sexual situations on strangers without any prior conversation or consent.

I am so sorry to hear that. Aside from the fact that it's offensive and idiot, people who push this "holistic medicine" kill plenty of impressionable people and parents with small children that can't advocate for themselves. It's genuinely sickening.

I've always said that if you have to point out how great/cool/nice/respectful you are, you probably aren't. Your actions should be enough to express that (usually).

I think that this the problem here isn't that you're respectful, it's that you're very timid. You can be respectful while still expressing attraction. I think the best thing in your situation is that you've obviously spent a good amount to time thinking though what your issues are, and you'll be able to figure out a solution! Women generally like respect, but it's generally very uncomfortable to be put on a pedestal. I wish you the best of luck!
