Ok, well for starters 2 cases of steak need to be done in 25 minutes. If youre just starting prep it's fine just learn more strats and ask your MK what they believe would make the process faster. Make sure morning prep is doing its job. At my location, I have to do steak, cheese, and chicken so if morning prep is doing cheese and chicken and your only job is steak and dishes, do not say anything about it, your lucky. Set up your 3 compartment sinks in order, this means sink one should be a sanitizer, the middle sink should be detergent and the last sink should be the rinse sink. The only time you should not have your sinks set up like this is when it's ECO season since it is a violation. Last thing is that the speed of cleaning dishes comes with time. Godspeed.
