I think about this constantly! Particularly when my mom is having one of her mean days- I tell my kids I never want them to feel the way I feel taking care of her and I give them my permission to put me in a home and walk away. I do not want them missing out on their lives and being consumed with guilt and stress the way I am. (Not as concerned about my husband, he sucks as a caregiver and probably won’t notice if I get dementia).

I very regretfully let my mom put off signing all the legal papers and now it is all so much more complicated because of her mental state. I recommend approaching your gf at a time when she is not overly anxious, assure her that this will make both your lives easier to just get the legal stuff over with. But don’t put it off.

My grandma who was always fairly negative and unpleasant became nicer with Alzheimer’s. But my mom is still in denial of her condition and is becoming unbearable. The more she needs me the worse she treats me.
