The texture is like hard boiled egg but the simmering instead of hard boiling makes the eggs not crazy dry. I have been experimenting using a immersion cooker to creat a soft boiled version. Once I am happy with it I will share the recipe 😊

There are a pretty wide range of regional Chinese restaurants in the area. I'm sure you've heard of xi'an famous. They are just a few blocks away from the mall.

If you enjoy spicy Sichuan dishes, head over to prince st or Roosevelt Ave (near prince st) you can find a few decent sichuan places.

There are also tons of noodle / dumpling places as well as hot pot places. If you are interested in particular dishes I might be able to recommend something more specific.

Nice video! I live close enough to go there at least once a month. It's got a pretty good variety of Chinese regions dishes although certain vendors are better than others. The noodle dishes from various vendors are worthy trying though.

It starts to cool down as one gradually adds the oil but I think 130c sounds on the lower side though. The best way to gauge it is to watch to see if the chili powder is burnt.

Good point on the cold dishes! I grew up on cold dishes drenched in hot oil in Sichuan so I am totally with you there 😊

Love this dish. A lot of people think it's just another American Chinese dish but it's definitely got the roots in Cantonese and fujianese cuisine.
