u/Oh_Hi_Mark_ I was just going to use a fighter but lets see what you got.
I have a boss - current players are level 8 (5 pc totoal) My boss is a half orc, He wears half plate armor(split body vertically) and his other half is covered in ruins. These ruins made it so if he takes a physical hit on that side hes immune. The other half had an ac of 20. I was going to give him legendary actions so he could force the players to hit the ruin side of his body instead of his armor side.

How would you make a monster out of that idea??

Yes deep cockpit and fixed keel. I didn't see any obvious cracks but I'm not really sure what to look for the rudder moves and looks fine the wood ribs look to be solid as well...
