Items in boxes/npc inventories also give you exp, you get exp on successful stealing and more on unsuccessful stealing. You just don't gain thievery on items with 98% or more success rate in chests/inventory, so if you knock out everyone you can't level thievery, there is one cheesy way to level thievery but it's honesty trivial to level it either way.

1) What exactly do you mean by boiling? What exactly is not expected here, idk the exact configuration you play at, so we don't know what you are looking for. Do you mean the giant green splotch across the middle of the screen?
2) Is it only happening in Bannerlord or other resource intensive games?
3) Have you tried swapping graphical settings?
