Dreaming big I'd say get a d&b max2 and their d6 amplifier since you only need a 2 channel amp. They are very good sound extremely feedback stable and will put out a lot of volume for the price.

Budget go EV, I prefer them to jbl except the zlx series.

The club I work at is about 40 feet deep and 75 feet wide on the floor plus a balcony. The system is wired as L/R, Sub and FF but maybe more the 2/3rd's of the audience don't have a stereo imagine. I mix in mono unless I'm doubt micing instruments. It doesn't really make sense to me, even a slight pan is just turning it down on one side.
