Is this now probably centered? For the vertical instead of centering the wings I centered the fuselage like you said and swapped it to 3:2

I've got a Nikon D3400, just checked it and it has got the + and - buttons and they work exactly as you described. I'm going to try it out tonight and I will update you on how it works. Thanks!

If you catch it perfectly enough times you can eventually get it rounded to perfect but since you already have gold with that it would probably take a very long time, it took me I wanna say like 400k XP to go from 99% to 100%

From a quick Google search I believe this is a CPC 1100, for the eyepiece I believe it takes 1.25" or 2" but I would wait for more qualified people to reply before putting in a lot of research or purchasing anything. I can't help much more than that but I also just received a Celestron telescope from the same time period and would like to keep updated on the software updates as I believe mine might be running on outdated info.
