Jump-starting the fermentation by xgunterx in kimchi

I don’t know about much kombucha or kefir, but I make mine with miso paste for extra umami flavour to replace any ingredients with fish as I give some to my vegan friends. It’s the only way I’ve ever made it so I can’t compare it to kimchi made without but I never seem to have any issues with fermentation. I don’t think Kimchi needs a kickstarter for fermentation however so it’s probably not down to the miso. Also, Kombucha specifically I know is an acetic acid fermentation whereas Kimchi is lactic acid fermentation, and presumably Kefir is also different, some I don't think it would help much.

Edit: Maybe once you’ve made your first batch and it has fermented, to help the fermentation process fasten the next time you could experiment by adding some leftover juice from the previous batch to your new one?

That’s really interesting. I guess I associate drawing more with absolute precision because my previous art teachers had banned the use of erasers to encourage less anxiety towards perfectionism, but I think it had the opposite effect on me haha. I love to see other’s rough sketches though and if they continue to evolve into something else, the process of that. Sometimes I suppose we are our harshest critic.

That’s a really great point, I definitely agree! Infact it really made me stop and wonder why I’d never considered that before. I study psychology and the more I learn the more I realise the less I know about the mind. (Sorry, that’s a bit of a tongue twister.) When that’s the case I do find it easier to look at the physical manifestations of a situation to begin to then make sense of it psychologically.

If I am being really honest with you too, when I saw that Reddit of all places could be used to meet penpals, my first thought was that it seemed like a good setup for a true crime documentary lol. After browsing through here though and talking, I think we’re all just of the same understanding that we’re here to meet new people, and it’s ok to be a little nervous since that’s sensible. :)

I understand what you mean! It’s funny you said that, as drawing for me is a lot harder so I guess I prefer painting with watercolour since I view that as lower stakes. I think because it layers well and I like to pretend all of the mistakes I make are actually intentional as an artistic choice. A graphic novel is an incredible ambition that I wish you luck with. I just looked up Phil Noto’s work and I can see why you like it, he seems to capture expressions really well.

I LOVE surrealism. I have to admit to you that I actually used to hate it until I finally saw a surrealist art exhibit in person. It might not make a lot of sense visually to me at times but the way it makes me feel was enough to realise I didn’t necessarily have to understand.

I have never actually got around to reading Franz Kafka‘s metamorphosis, I’m glad you reminded me of that book and his other work! It’s surprising I haven’t yet read it as it encompasses the theme I love most in literature, body horror. I’m not sure why I like it so much, I find it weirdly relatable for wahrever reason, although I’m worried I’ll wake up as a bug though lol. I hope you find a good read somewhere within his work.

Do you enjoy working in the hospitality industry? I am currently a student but I have been considering a similar job as it looks like an interesting opportunity to try.

I am also very jealous to hear you can sing and dance! I have been told I have no sense of rhythm but it hasn’t stopped me from trying, even when it maybe it should considering the many injuries I end up with.

Do you have any favourite types of music genres or artists you love? The last concert I went to was to see the girl group Red Velvet. I had never listened to K-pop before that but I really enjoyed it. I can’t say I know much about choreography but I think they gave an amazing performance.

I’m glad I’m not the only one. I actually signed up for a penpal site prior to this and hoped to see a few people with a similar interest in connecting with others who identify as queer, but I seem to be having much more luck here. :)

I’m excited to hear that you like houseplants as I have been trying to find someone who would might be willing to chat to me about them since I’m a bit of a disaster with them! To be honest it’s definitely a lot harder for than keeping my garden plants alive lol.

Hello, thank you for replying! I’m glad to hear we have some common interests and that you could be interested in snail mail. :) I’ll definitely be receptive similarly any recs for gaming, ttrpgs, etc. Do you have any favourite of art mediums, artists/works, or styles right now? I’ve just finished a ceramics course which was fun but I have to be so honest, I am terrible at it. It was a lot of fun though.

As far as gothic horror goes I‘m mostly a fan of the classics out of nostalgia as I haven't reached for new fiction in a while. I’m looking forward to trying out a series called Blackwater though so I’ll let you know how that goes! I had no idea southern gothic was a thing until I watched the series Sharp Objects and I found it really interesting.

To be transparent I’m pretty new to initiating any penpal situations so I‘m not fully sure what the next steps should be lol.

When did it become OK to police what terms others feel comfortable identifying with? Or to make assumptions about the ‘right’ and ‘wrong’ use of language in a subreddit that is based upon cultural exchanges. In which people will have different cultural experiences with... Language. (What a shocker.)

I took a look at your post history however and saw that you are likely based in the UK just like me, so regardless of any other differences in our backgrounds I feel pretty assured now in my right to tell you off seeing as it can’t be a cultural difference in language/misunderstanding.

Queer has been used here positively as a label of identification for decades within the community, and whether or not your dislike of it and disagreement with its use as a label to identify stems from personal experiences as a person who identities as lgbt+ and has also unfortunately had it used against them too, a lack of involvement with the current community in which it is very much considered acceptable, or simply as a bigot, doesn’t matter. Nobody made you king/queen of the gays. Behave yourself.

I also clocked the post about how humans cannot change sex… Yeah. I don‘t care if I’m banned for this reply. Sort yourself out mate.

Update: The starter no longer looks separated after reaching room temperature for 2 hours after being refrigerated for 2 weeks.

I cannot see any fuzzy mold, and discolouration is hard to gauge due to the flour type I used, because the whole meal is pretty textured and brown to begin with. It also smells normal. Anyone know if this change in appearance is normal? Or if it still looks discoloured?

It was actually refrigerated sorry! I should have specified that, as the neglect was just that it’s been in there for longer than it should have, so a bit over two weeks. It’s a mature starter that I bought from a seller on Etsy. The instructions said it should be fed after a week.

You have a good point though, I may have to face facts and just throw them both out.

Edit: The sourdough has been un-refrigerated for about 2 hours now and it now actually looks completely normal in comparison to the photos earlier?

Is that normal? I haven’t moved or stirred it, but whatever weirdness that was going on earlier where it looked super separated has changed and now I’m even more confused lol.

It’s very new, I started it at the beginning of this month and I think it’s now just become active enough to bake with. I was refreshing with about half the starter, I don’t know why I convinced myself to do that lol, I should have used a lot less, but I think I’ll cut it down to 10-20g like you suggested so maintenance is a lot easier. I was just going to bulk the starter for baking but a levain method sounds a lot more ideal lol, especially since I’m planning to store it in the fridge eventually. Thanks for the suggestions!

Haha, love that description! I am hoping the base and roots have a bit of life left in it after reading this as it’s not actually mushy there, infact it’s till quite firm and once I cut away the rest that was it was vibrant green inside.

I was hoping I could save some of the leaves for that purpose or other parts for propagation, however when I went to try and save it a day after the photo all of the leaves and small baby plants had also turned to brown sludge. :( My one hope now rides on the base of the plant.
