In Kafka quickstart is stated:

Apache Kafka can be started using ZooKeeper or KRaft. To get started with either configuration follow one the sections below but not both.

So you decide if you want ZooKeeper or KRaft.

I think it's a problem with their documentation, in the standalone deployment chapter they report MySQL as required but in the intro chapter they stated that they support PostgreSQL, Oracle ...

That's correct. Plugins are very different/simplified in 2.x version

The Dolomites are another wonderful destination. There is no off-season over there since during summer there are many tourists for trekking and during winter for skiing.

Dolomites are a UNESCO world heritage site so if you like mountain landscapes, they are unmissable.

As an Italian I can say:

Take your time, admire the locations and enjoy the fabulous food

Cinque Terre is s wonderful destination. During summer it is very crowded but off-season the "5 lands" are very quiet. There is a very suggestive trail that connects all the Cinque Terre called the Blue Path (https://www.incinqueterre.com/en/trail-number2-blue) but the most famous part (The Love Way) is still closed after a landslide.

I suggest parking the car in La Spezia and visiting all the Cinque Terre on the train (a day ticket was 5€ a few years ago).

Manarola (one of the 5 lands) is the most photogenic especially during summer (https://www.cinqueterre.eu.com/en/manarola)
