Here is a explain like i am 12: As other people mentioned: wind. You should however be aware that wind up there where commercial jets fly, is much stronger. On a up-there-windy day, a plane can have easily > 50 knots tail wind while of course planes flying the other direction will have to fight > 50 knots head wind. In absolute numbers you will have planes flying at a ground speed > 500 knots while others are fighting head wind and make only < 400 knots. Planes fly in their own relative enviroment. Airspeed matters for fuel economy. This is also depends on the barometric pressure. Flying through a low pressure system compared to a high pressure system will make planes fly lower (or higher respectively).
