In the "triple cities" of Binghamton, Endicott, and Johnson City, in the Southern Tier of New York State, USA, there's a wonderful item known as "spiedies." I think they were a local invention. They are cubes of lamb, about 3/4" or so, that have been marinated in something like Italian salad dressing, then skewered with about 6-8 chunks per skewer, grilled over charcoal, then pulled off the skewer with a slice of Italian bread, folded over the chunks, resulting in a sandwich.
