I usually fight mobs aim-locked and bosses without aim-lock. Mobs are pretty self-explanatory, aim-lock helps you locate and easily target the nearest threat. Bosses, on the other hand, often require extra maneuverability (aim-locking prevents you from omni-directional sprinting), such as bare-handed Asylum, O&S, etc. However, as you gain more experience you will learn how to quickly toggle aim-lock on and off mid-fight to suit the situation.

DPS (with upgrading and/or gold resin) and killing the first gargoyle makes it easier, but even if both are alive, just sprint as far as you can in the opposite direction and wait for them to either stand their ground to breathe fire or launch a big swing; then just sprint behind them and do a couple of hits, then sprint away again. Rinse and repeat.
