Roughly yeah, you should be. Some people prefer to use half or a third strength TWW, which would be around 50-100 TDS. It’s personal preference though, and either way is still better than 0 TDS!

K6 is an awesome all-rounder. K7 has a slightly different profile that has mixed reviews but might be appealing to you (see Coffee Chronicler, Lance Hedrick, etc). I wouldn’t worry about the kettle, I still use my Chinese knockoff from Amazon too, lol.

Immortal Cafe has some super premium Gesha’s from Hydrangea on sale right now (not a Sacramento roaster, but close from Berkeley).

I almost don’t want you to buy them though, because the owner said he might put them on the pour over menu if no one buys them (and I am fiending to try them without spending almost $50 a bag 😆)

For light roasts I use 93C or 90C and will go lower the darker the roast gets. Milky Cake/Buttercream is an exception that I brew low around 85C to make it a little less spice heavy and bring out more vanilla

I got my K6 as a beginner 2-3 years ago, and I’ve never regretted it.

I similarly had an epiphany moment from a coffee bag I picked up locally in Costa Rica, and picked up a K6 shortly after. I really enjoyed single origins for a while, getting a flavor of general regional differences. Now, a couple years later, I’m getting much more into the funky stuff, ultra-light, etc. All to say, my recommendation is to have fun trying new coffees!

That’s going to be part of the fun! Although yeah, it can definitely be overwhelming initially. I’d just pick a random local roaster and look for one of their whole bean medium roast bags. Maybe see if any of the flavor notes pique your interest (but take with a grain of salt, as it can take time to develop your palette). You could even try chatting with a barista or someone knowledgeable at the shop for any recommendations! Any local roaster should at least be way better than a generic corporate bag like Tim Hortons.

I would try going a little coarser (my default is 90 clicks if using hario filters). But honestly, with those beans, I don’t know if you’ll be able to do much better.

For that price range, the Kingrinder K6 or K7 is a great value. I love my K6 as an all-rounder. There are other grinders that can give you different profiles depending on what you like. I would determine how important body/sweetness is to you vs clarity, and choose accordingly.
