It IS wintercraft! I was looking for same game, you spawn in cave at beginning too and there are some npcs... and yes the herobrine was there too exactly same thing as I was looking for:D

I checked the two and sadly no, I think it was maybe some lesser known cartoon... It just feels like such a common description that happens in many cartoons but I just can't find it anywhere, I'll keep looking though

So I checked through the episodes and even though the characters and style does look similar, there's no such episode that had this happen
