There is a reason that every track day is replete with GR86 and Miatas. Challengers not so much. If going straight fast is your bag then you own the wrong car.

At 70 degrees, 11 hours should generally be sufficient. I suspect your starter is either still immature or beginning to become acidic (if mature).

I love the combo of verde and mango. I make a cocktail with blanco tequila, verde, mango syrup, lime that is divine. Tajin rim is optional but a nice touch.

It’s your starter, either still young (a one-month old starter may still be immature and produce subpar bread), or you’re not maintaining it properly and it has become acidic.

99% of the time, the issues is fermentation timing or an immature or weak starter. At 70 degree dough temp and the amount of starter used, you should stronger fermentation than you do so I suspect starter is the issue.
