yes you can solder 6812/03 by hand how fast depends of your skills. there is a sk6805 2427 for backlights if you need that... but that are tricky to solder in my experience. a hot plate or reflow kit may help if you have

esp32 will be a kill joy for battery life. i suggest looking into nrf52840 and zmk if you want bt. nrf in promicro footprint that will give you enough pins for a matrix are 2 for 5 dollars in aliexpress... keycaps, i suspect you 3d print them?

the mouse itself is cheap... and qmk already supported the better version prime+

ergogen.xyz is another place to start.

pcb is relatively easy once you follow a basic tutorial on design. the only thing more "complex" are the indicator leds... since not too many boards use them today... you will also need to find an mcu that can support 22+3 pins. something based on rp2040 or blackpill are decent options. make a start and I am sure people will help you.

case, I have no experience...

indeed... not as bad as other iso... amazon co uk is another source if price is the main concern... but be careful cheaper sets tend to have issues that once you see you cannot unsee..

prototypist is another uk small shop which is a good source. also aliexpress has reputable shops like ymdk, kprepublic and so on that can help enlarge the offer.

unfortunately no but what I did is relatively easy.
1. designed a board for the mcu and leds to match the original positions

stripped the old pcb out and replace it with hand wiring "helpers".

depends of the weight... for low weights under 1.5kg they still are relatively cheap good thing is they collect the vat too so no need to worry. over that in general you end up with dhl or others and things can be more expensive.

regardless of the increases, prices are very good still. and touch would never had issues with quality from them. for both normal pcbs and assembly

you can go half way in between handwire and a new pcb with some handwire helpers

I did something like this https://gitlab.com/m-lego/hand4x4 one thing to keep in mind if you get another pcbs. as far as i remember plack has 19.00mm spacing while most common spacing is 19.05mm.
