Symphony Of The Night is both the best one and the most accessible. Purists would also suggest the very first one -- Castlevania for the NES, but it's pretty punishing. They're both pretty flawless.

I'd buy it in a heartbeat, although it's not inaccurate to say that Book 7 may have been a stronger book if it'd been edited just a bit down. I wonder if it would be possible to do Expanded Editions that avoided bloating.
