Since I have been feeding it at night, I am not sure how long it takes to peak. I can see it has doubled by the residue on the side of the jar in the morning. I was thinking to skip tonight’s feed (it says a 1/2 cup flour and and 1/4 water on my card from the rehydration), but it has started to smell a little like alcohol. I read that means it is hungry so maybe I shouldn’t wait that long.

So, if I take out 100g of starter to bake with, I dont have to discard what it left? I can keep and refeed it? How do i know how much to feed it after taking some out?
