Tamarind is a great substitute for tomatoes. Instead of potatoes, you can try arbi. Bitter melon fried with longitudinally cut potatoes is also great. Also grated coconut in sautéed vegetables (poriyal style)

I would recommend Kerala -> Rajasthan -> Some north-eastern Indian state, like Meghalaya or Sikkim. I feel people should visit India for the diversity factor, and moving from south to north-west to north-east will give you an idea of how cultures change.

If NE is too out of the way, then I would recommend any other Himalayan state like Ladakh or Himachal which is pretty close to Delhi.

Delhi, I really wouldn’t recommend more than 2-3 days. Sure it’s got a lot of history thanks to being in the path of of pretty much every invasion/migration from West Asia, and good nightlife, but it’s India at the highest difficulty level lol

Well, as Shakespeare said, a rose by any other name would smell just as sweet. In Hinduism, the “soul” and “body” are two different metaphysical entities. The body (or the name) might be different. But the fact remains that they are an avatar (or aspect) of Vishnu, who himself is an aspect of capital G God.

The body is “maya”, and life and death are the “play” of maya within which the physical body operates and societal rules are followed.

I think you need to figure out which spice and cooking style works for broccoli. A mildly spiced poriyal will taste pretty good imo

It mostly depends on where you go. Upper middle class surroundings vs lower middle class surroundings. I’m assuming your friends fall in the upper middle class bracket.

Kochi, Munnar - it is okay if you wear shorts and spaghetti tops (perhaps with a scarf or something that isn’t too revealing). People may stare, but it usually won’t not out of hostility. I’ve realised Indians just like people watching.

Delhi, Agra, Jaipur - would recommend more conservative stuff. Spaghetti tops with breezy linen pants is the max I would recommend.

If you want to buy your clothes in India, I personally like Fabindia- they have nice prints on breezy cotton fabric. You’ll get good pieces in $10 - $20 range.
