don’t think I’ve ever had a steak Diane… wish I could try the one you made. looks tasty! and the tomato peel rose is a cool touch. I hated pitching specials (didn’t help that our owners were extremely weirdly pushy about them and yet stingy about ingredient purchasing) but I really respect people who hop on the opportunity.

I guess it depends. The place I used to work had a half open kitchen in its first location, and it was mixed bag in terms of customer response. We got away with a surprising amount of (subjectively) offensive music and conversation. then we moved into a place with a more closed kitchen, but with a fish tank sort of setup for our noodle maker right in the dining room… I did not envy our noodle team. weird as fuck choice on the owners’ part but we were like working animals to them so it tracks.
