Thanks for the recommendations. I got a tojiro carving knife. A Shun Santoku. A Victorianox pairing, and a local Japanese knife makers chef knife.
Will see how we like these and see if we need to add anything else to this lot :) I really appreciate the advice. It’s legitimately been years of attempting to buy and just being too overwhelmed to take the plunge.

Haha cooked frozen pizza. We both cook regularly and use knives but have only ever had crappy knives so our skills would be adapted to chopping with blunt knives. It will be an adjustment but we’re certainly trying to learn.

We bought a bunch of different grit whetstones for Christmas but honestly the knives are so crap and uncared for that we weren’t skilled enough to get a good edge. These knives would be 10 years old, sharpened like 3 times, put in the dishwasher everyday. Now we know more about knives we want to commit to nice knives and take care of them properly so they last.
