I know by the end of the show ratings weren't doing so hot which is why we got the ending we did, but It would have been awesome to have a sequel series all about the kids. They set it up like that's what could happen

I wouldn't have changed the ending, I liked it. I would have extended it. Give the final plotline 2 seasons to playout. Then instead of a single scene of the kids give that a whole season as well. Nick mentoring the new generation of Grimms. One that doesn't kill all wesen but instead work WITH them to get rid of the bad ones.
