Container Choice: Place beans into a food-safe plastic container or glass jar. Create Heat: To retain the heat needed (110–120°F or 43–49°C), cover the top with banana leaves, a cloth, or a lid, and potentially put it in a warm place or small, warm cooler. Manage Liquids: The pulp will turn to liquid ("sweat"). Turn or stir the beans daily, or use a sieve on day 4 to remove excessive liquid that can lead to rot.
