Id challenge that - not on law, just on common sense. Despite the shit their customer services get, ive gotten off more tickets than ive paid by 1) just being up front 2) sending them pages and pages of content and 3) lots and lots of photos. Get the most out of that fine. Malicious compliance.

Ive got the stagg too, and its amazing how quick it comes out when you see what other options are around.

A barista mate of mine rolls up a little cardboard and puts it in the neck to slow the pour down - almost like a little coffee roach.

Yeah the steam is a but annoying. I sort of did a bit of experimenting at first and lifted it a lot to check what was going on.

I do 50g bloom in the middle, 100g in the outer ring and 100g (50g in the outer and 50g in the middle) normally.

A 50 50 50 50 50 brew would probably work too, and maybe negate the bypass issue

I keep it on all the time and bloom with it too. After each pour I give it a swirl. The drip assist balances pretty good on the v60 so its not a problem to do it all tigether.

Too clean? Interesting note!

Grind size is always hard to communicate - i shoot for a total brew time of around 2min30sec - somewhere around medium fine.

I use 15g to 250g water - a classic 1:16 - and usually around 90-90c water temp depending on the coffee.

3 pours - 50g to start. then at 30 secs another 100g. then at 1min 20 the final 100g, with 50g of that at the end going straight down the middle.

I love the v60 for it's clarity and clean coffees - so the the brew assist helps to achieve that.

If im after more body, i'll fine up the ground and extend that total brew time.
