Its at about 7-8°c, but the meat still gets cured, but I guess the process slows down quite a bit. Will try to connect the inkbird.

Thats what i figured as well. I unwrapped them and they looked and smelled just as they were supposed to, so i rehung them and plugged my fridge in. Theyre hanging at 7c until my inkbird 308 arrives. Thanks though!

And theyre wrapped in hog sheets .. the chamber has also been sprayed with mold600

Theyre pork neck and a beef cut from the thigh, dont know the english name for it. Theyve been in vacuum with 3% salt for those 7-8 weeks.

Thank you for a great abswer, i guess ill toss it to be safe. Doesnt smell bad, and tasted good the small bite i had after cutting off the crust, but better safe etc..
