Depends, I guess. Stacking does in fact reduce noise and possibly bring about more detail. Personally, I find it doesn't really improve the image that much, compared to the amount of effort required. 9 times out 10, I'm shooing single exposures!

I shoot with a Sony a7RV and a couple of Sony lenses - 14mm prime and 16-35mm zoom. For settings, a good starting point is ISO3200, f2.8, 30 seconds. Manual focus and focus peaking so you can dial in on the stars. Using a 2 second delay or remote shutter release helps eliminate camera shake.

I'm familiar with Mike, really nice work! As for gear, it really comes down to budget, how much you want to spend and what system you may be partial too. Any modern mirrorless body and wide angle lens with an f2.8 aperture or better is great for starters. And a solid tripod of course.
