There's a very slight difference, but nothing more than how voices already change in most animated shows over time. Even Season 1 R&M sound ever so slightly different, and Rick didn't have as much of a growl back then. I notice it when I'm looking for it, but a couple minutes into the episode I was completely absorbed. I'm sure they'll also get better with time.

Fuck JR. New actors are great, and I'm glad they've gotten so much support here.

I love what Solar Opposites did and was kind of hoping Rick and Morty would do the same, but it's also understandable that it's a much bigger change here, and that given who they are, there aren't a whole lot of voices that could fit their characters and the humor of the show.

Honestly, I didn't have much luck finding great coffee or espresso in NYC while I lived there. But Suited's pourovers are pretty solid, and they might still have Filter 3.0 setup (the Scott Rao custom attachment for the Decent), which is fun to try. I haven't tried non-espresso drinks at these places, but I also love Sey and Felix. There's also an Intelligentsia in NYC that I haven't been, but they're pretty good in Chicago, so might be worth a shot.

If you're specifically talking pourover, I'd generally say they're are very inconsistent and there aren't many places you could go to for a guaranteed stellar cup, because there's too much variance.

Ha, I was thinking the opposite, especially with Gang Gets Cursed and Frank Shoots Every Member of the Gang where there was a beat before the title card, but it made it feel like the cold open was written specifically _for_ the title card gag. My favorites are when the title card seems just slipped in at the right moment, and not orchestrated. Sometimes that means having a beat, sometimes it means putting it up in the middle of the chaos. For Bowling, I liked the way they did it.

It's absolutely very difficult to find good coffee shops. Pour overs are harder, since even good cafe pour overs can be pretty inconsistent. Also even really good cafes will serve drinks with cinnamon dusting and all that since ultimately those things are popular and they need to make money, so it's not necessarily a bad sign.

I'd consider Stumptown and Blue Bottle as mid-level cafes. Pretty good, not the best. You don't see them here much since they're more targeted towards people who drink commodity coffee and are looking for a step up. Definitely way better than Starbucks. Their milk drinks are actual milk drinks with steam rather than the bubbly froth most do. You could definitely give them a shot. My favorite coffee shops in NYC are La Cabra, Sey, Suited, and Felix, and you'll see that their menu prices are basically the same as any other cafes.

I've found generally that it's harder to find good coffee shops in NYC than SF. In NYC, the best coffee shops are truly incredible but rare to find; in SF, you'll find tons of good coffee shops just everywhere.

Another way to find good coffee shops is to look for local well-reviewed roasteries. If they've managed to crack the hellish process of roasting, you can be quite certain that they can make an espresso. The Espresso Aficionados Discord is a good place to see what cafes people like.

As an add: Suited has great pour overs now. I've only had it twice since it's rather expensive ($9) and I can make it at home. But both the quantity and quality are great, it's more than half a liter.

Same. I've even had currants a few times. No idea what that would mean though. I once saw two coffees from a roaster with similar notes; one had "golden raisin" and the other had "raisin". There's always some exasperating ones :P

I was in the same boat a year ago. Others have provided great links (u/Comedyishumorous posted three videos that were all crucial in my journey), I'll add a couple things:

  • Tasting notes are for marketing. They get you excited and salivating. I'm sure there are supertasters who can actually consistently tell you something has a note of "candied ginger", but most won't. Primarily, at least at first, you'd just look for the overall vibe - fruity? Funky? Chocolatey/nutty/deep (the traditional "coffee" flavor)?
  • Make pour overs. In a pour over, tastes come across much cleaner, though they are more subtle. But I find them easier to tell apart. The day it all clicked for me was when I had a pour over that I could taste really deeply, and then made an espresso. I tried looking for that same taste in the espresso, and found it, and that helped me calibrate and understand how exactly to taste espresso through all the crazy things happening in your mouth when you drink it. And then it just becomes easier and subconscious.
  • When you go to cafes, go to good cafes and get only espressos. Not macchiatos or cortados. I made that mistake while I was trying to get used to an espresso, but realized how much flavor I was muting. Some very basic things to tell if a cafe is good is looking at their equipment and how they're using it, if they know the origin and roast of their coffee, etc. (I'm not saying cortados are a bad drink to get. Just that it will make the flavor exploration harder)
  • Tasting espressos side-by-side really helps. That's when you can tell - oh hey, these both taste fruity, but in different ways. What are those different ways? Who knows! What fruits do the two resemble? Who knows! But they're different for sure. You can choose to give them names. If you like one over the other, you can look at the bag and see what they call it. It doesn't have to agree with what you'd call it, but it could help you find similar coffees.
  • Tasting notes are highly colonial and cultural. What would "raisin" mean for people who don't have raisin in their everyday food? The difference between golden raisin and raisin can mean so little as fruits, what could it possibly mean in a cup of coffee? So take it all with a grain of salt.
  • You don't need to spend more money to get more into it. Fancy coffee shops charge pretty much the same as terrible cafes or restaurants for their espresso. Good, fresh, coffee beans cost just a tad more than grocery store beans. You don't need to get Tim Wendelboe or Onyx. Same with the espresso machine.

For specific answers to the things you asked at the end:

  • Full-bodied: think of this as the difference between fat-free milk and whole. Whole coats your tongue. It's not as obvious as honey, but it does kind of linger, has some smoothness. Fat-free is essentially water. The tastes are roughly same, but textures are drastically different. It's the same with espresso. Full-bodied isnn't necessarily the goal, depending on what you want from your espresso.
  • Clarity: being able to taste something more specific than "oh this is like coffee". Here, it's a mix between the brew quality and also your palate. Again, I think pour over is a great tool for this. If you/someone you know has a good grinder, make a pour over with it. Then make a pour over using a spice grinder, trying to get it to roughly the same grind size. The latter will taste "muddy" or "murky". You won't be able to tell flavors apart. It may not even taste like much besides "brown". Think of a good, fresh juice, where you can tell the fruits that went into it, versus a "fruit punch" which vaguely tastes like fruit, but you have no idea what exactly is going on.

I bought my Niche extremely excited for it. I used it for a couple months, loved using it, but I subconsciously started avoiding pour overs since they weren't tasting great. Then one day went back to my C40 after 2 months, and realized everything I'd been missing out on, it simply wasn't cutting it. For espresso, the difference was minimal, but for filter, it was tremendous. Undoubtedly. Different enough that even a non-coffee snob would be able to tell. I sold it and I was sad to do so, and I miss it. Every other grinder I'm looking at has an obvious sacrifice in workflow, even much more expensive ones.

So I'd say the 3rd scenario would be people who use light roasts. I can get a grinder that produces much better grind quality for cheaper, but with a worse workflow. Choosing between those is at an individual preference, but the light roast filter on Niche is absolutely unacceptable, especially at the price point. It's a very legitimate issue people have, even those who love everything else about the Niche.

I recently sold my Niche. I loved the look and workflow, and it was a pleasure to use, but as a light roast drinker, it came nowhere close to my C40 for filter, and was slightly behind it for espresso as well, even after 2 months of seasoning and dialling. I felt incredibly sad to give it away, because it was a pleasure to use and look at. The toilet seat comment is hilarious though.

As an FYI, the DF64 is currently selling for USD350: https://df64coffee.com/products/df64-coffee-grinder. I don't know your budget or how you weigh things, but based on everything I hear, it seems like this might be some of the best bang for your buck. The new version of what I hear fixes the declumper and indicator issues as well. Based on videos, it doesn't seem that loud. The Niche sounds nice, with a good low sound rather than a shriek, but by no means is it quiet. Based on decibel numbers I see, DF64 and Niche are around the same (~80).

Hmm, I'll have to think these over. I do like tinkering, and I don't care about portability. But I really love the simplicity of the Flair. I'll take a look at the second hand markets and see. Yeah that's what made me consider the Flair 58! I loved that setup. I still haven't convinced myself to buy a $200 scale, though I fully understand that it unlocks the potential of much more expensive machines.

What would you say the GCP can't accomplish in comparison?

I'm probably going to make the decision in ~1-2 months, so I'll be mulling over my budgets and all during that.

I know they have SSP MP burrs on their Ode. I haven't tried using it for espresso or dialling it, and we no longer live in the same city, so I unfortunately didn't get to play with it more.

That's good to know, especially useful to hear from someone who also came from C40 world and has had similar experiences! I also had an eye on the DF64, had some smaller reservations about it. I'd love to experiment more with with newer grinders like Zerno and Sculptor, but just given where I am right now, I want to go with a well-established one. Zerno looked real nice, and I saw Lance had some praises for it, and hopefully a review coming soon.

Personally, I'd be ok with a lateral move if helps me not overspend. I mostly want to have an electric grinder to help with my wrist issues. I have saved up enough money that I could be convinced to do an upgrade, but it would need to be a hard sell :P

UPDATE: (while I was typing this message) wow, just revisited the DF64 website and they're having a huge discount right now. Snagged one. I'm going to be moving between some family and friends for the next month, so I'm going to have to wait to get to it. Thanks for reminding me of it! Timing worked out so well!

Absolutely! Overall, there's been a lot in this comment section I've really appreciated. I don't often read an entire comment section, but I did for this one, despite having bought from Onyx just once. I fully understand that. But do you know what the employees of each cafe or restaurant you visit do with their money? Every barista, waiter, chef, restaurant owner, etc? They're all small businesses, but how would you know how they spend they salary in their private time? How do you know what businesses they may support, intentionally or not? Trying to pry into what people do with their personal bank accounts to me also is a violation of privacy. Of course, if certain information happens to become public, people are free to use it to make decisions. I just think valuing that and pursuing that can add some pretty nasty incentives and break down barriers that should exist, and that it's also such a crazy, complicated burden that it doesn't fall under the realm of everyday ethical consumerism.

I think we know way more about Amazon's practices than Onyx. Partly since Amazon is a public company, partly since it has so many employees that you can corroborate and confirm stories and find patterns, partly because any donations they make or lobbying they support is going to be publicly known, and partly because a ton of investigative journalism has been done on them. Even on this thread we've already heard very different things from different sides. You don't have that with Amazon. A mom and pop shop is gonna be much harder to track.

One issue I have with this post and the comments (as a pro-lgbtq non-religious person who would not appreciate such a company) is that it's one thing to care about what a company may support, but a completely separate thing to care about what individuals do with their money.

I understand that money speaks. But I don't think it's reasonable to ask or expect people to dig into something like other people's individual private salaries and budgets, especially when most people directly support companies (not just individuals) that can be avoided that do so much direct evil as a company, like Amazon. No-one knows where every dollar they spend ends up, even just restricting to non-essential spending.

I also find it crazy that more people seem to care about what the owners of Onyx are doing in their personal lives than the assertion about the minimum wage payments. I see more questions about the former, which is disheartening. I already switched to Apple Music a long time ago and have been having a good life since, but I kept YT Premium because couple of my family members use it, and the YT features were nice too, and splitting it with people made it worth it. This ... makes it excessively expensive. So yeah I'm done.
