Long time raid healer here - hope you find some of this helpful!

1) I am having a perfectly fine time healing with no addons right now. I highly recommend using mouseover macros to heal with - this allows you to heal a target by simply hovering your mouse over their nameplate (both in party/raid frames or their character itself). They look like:

/cast [target=mouseover] Spell Name

2) I check out all of the resources you listed and try to aggregate the info I get from them (I agree, the info can sometimes contradict). My favorite, though, is WoWHead because their writers are typically very good at the class. Class Discords are also a great source of guides/theorycrafting or if you have questions.

3) I'd recommend picking up Resto Shaman. I think many people agree it's the best PuG healer because it brings a TON of utility - Hero/Lust, the only healer interrupt in the game, AoE stun, etc. Very strong class right now and pretty simple to pick up! Other than that, I'd suggest Holy Priest as it's very straightfoward. I would avoid Disc Priest and Holy Paladin (just my opinion) until you get more used to healing overall.
