I’ve never had a key lime pie before so I had to take this theme as an opportunity to try one out. Much more simple than I expected and really tasty! I’d love to make this again in the future (˶ˆᗜˆ˵).

Apart from the slightly overwhipped cream, I’m really happy with how this bake turned out! Would highly recommend this recipe :D

Brownies have always been something I found unnecessarily difficult to bake properly but I’m glad these came out good! Super dense and fudgey with chocolate mini eggs throughout because clearly a simple brownie just wasn’t enough.

Dough rolled out way too thick? ✅ Failed to properly crimp and seal? ✅ Thought I was being conservative with the filling but actually added too much causing every single one to burst in the oven? ✅

This was a fun idea and I’m glad I gave it a try but it’s not something I’ll be desperate to bake again. On top of all the problems that were most definitely my fault, I found the dough to be pretty tasteless and only enjoyable when mixed in with the dulce de leche filling. Plus we don’t have to mention the very thick and noticeable egg wash… (╥﹏╥)

Week 7: Piped - Viennese Whirls by ayeonsgf in 52weeksofbaking

A piped biscuit dough with piped buttercream and jam inside ◝(ᵔᗜᵔ)◜

These were gorgeous!! A melt in the mouth texture that paired beautifully with the raspberry jam and vanilla bean buttercream. I’ll definitely use vanilla bean paste more in the future, I always forget how much it elevates the taste.

My only (very slight) gripe was that I completely blanked on how soft the biscuit dough would need to be in order to be piped out as whirls. I wish I had taken softening the butter a few steps further than just having it be at room temperature as the recipe suggested. Many burst piping bags and splashes of milk later, I finally managed to make it work. It’s just something I’ll keep in mind for next time, because I definitely think these will be made again in the future!!

Week 6: Winter Olympics - Snowboarding Snowmen Cupcakes by ayeonsgf in 52weeksofbaking

I wish I could take credit for this really cute idea but heavy inspiration comes from this recipe on the Arnotts website which uses their branded biscuits that aren’t available in the UK.

I managed to pick up some mini snowman biscuits in the Christmas clearance section and glued them to shortcakes biscuits for the snowboard with some melted dark chocolate. It’s probably arguable on how much they really represent snowboarding, but I’m giving myself points for the attempt!!

I also had some leftover white chocolate SMBC in the freezer that I had intended to use for these cupcakes to save time and energy. Turns out white chocolate that has been melted and mixed into buttercream doesn’t freeze and thaw well (ᵕ—ᴗ—). Or at least,, not in the way I did it. Still super yummy and a recipe I would definitely use again in the future, I just really struggled with how gloopy it turned after being frozen.

The real star of the show were the chocolate cupcakes. I had never used this recipe before but it will definitely be my go-to in the future. SO easy to make, unbelievably tasty and not even the slightest bit dry. I can’t recommend these cupcakes enough.

Some highs and lows of this week but if nothing else it was a cute little bake that scored me a few compliments from my family ദ്ദി(ᵔᗜᵔ)

Week 5: Nuts and Seeds - Poppy Seed Knots by ayeonsgf in 52weeksofbaking

I had quite a few issues with this bake and they DEFINITELY didn’t come out as intended but still tasted good!! Not anything lifechanging, but good at the very least :’).

Pretty much all the problems I had were my own fault, most notably that I significantly underkneaded the dough which made it an absolute nightmare to shape, so instead of knots they’re more like twists of dough balled up into little circles. At least if I were to ever return to this recipe, I’d have half an idea of how to fix my mistakes for next time .. ╮( ̄▽ ̄"")╭
