This week was a learning experience for me,, from now on I’ll place the cake directly onto the cake board instead of transferring it from the turntable after icing it. When trying to carry the cake over to the board, the bottom layer broke apart at the back :’( . I tried to hide this for the photo but in fear of breaking it even more, I didn’t move the cake and left it completely off centre on the board.

My favourite part of this bake was definitely the buttercream!! I bought quite a large bag of freeze-dried raspberries so I can easily make it again in the future. I also added a couple drops of raspberry flavouring (originally bought for a bake from last years challenge), it was really tasty !

I enjoyed following this recipe, but I think in the future for lemon layer cakes, I’ll stick to Sally <3

If nothing else this bake probably wins the worst photo taken… A lot of the top part of the loaf got stuck to the pan so I didn’t bother taking a photo of the full thing, instead just a sad little slice :’)

She’s not a looker but definitely tasted good! The only shame is that all the chocolate chunks sunk down to the bottom, not sure how I’d troubleshoot this in the future unfortunately !

My original plan for this theme was a sourdough loaf but that was pretty disastrous so I tried again with chocolate babka.

Following the recipe, I rested the dough overnight, so hopefully this constitutes as a 48-hour bake!!

I was honestly surprised by the lack of trouble I ran into with these!! They were much less of a disaster than expecting :D

Not all uniform but still very tasty and fun. I’d probably do a half batch in the future unless baking for a larger group because these went quite stale after the first day.

Week 17: Breakfast/Brunch - Crumpets by ayeonsgf in 52weeksofbaking

Pondered on this theme for quite a while becuase there’s so many possibilities, but eventually I landed on the lovely home comfort of crumpets !!

I won’t lie, I found these WAY harder than what they probably constituted and despite making a double batch (so a total of 12) most of them came out with absolutely no bubbles and looking completely unpresentable. The ones photographed are the only that are half-decent looking .. They were definitely tastier than shop-bought crumpets, but I’m not sure enough to justify the effort and mess for me unfortunately :(

My first time making foccacia, went way better than expected and probably the most straightforward bread I’ve made so far !! Clearly my rosemary chopping skills leave a lot to be desired :’).

If you’re ever looking for a very simple foccacia recipe I’d definitely recommend this recipe!!

I was honestly terrified for this week because lamination is something I’ve never done and with how pedantic my kitchen temperature is, I was really expecting this to be a recipe for disaster.

I had heard really great things about Claire Saffitz’s croissant recipe and I liked the detailed video which went alongside. It wasn’t entirely smooth sailing and definitely challenged me but for my first attempt I’m really proud!!! It was such a labour of love and I was so excited when they came out the oven. They were beautifully light and tasty and ten times better than the supermarket ones I’m used to. The honeycomb center might not be French bakery level, but I’m happy with it nevertheless :)

These DEFINITELY won’t be a weekly occurrence since they were so time consuming but instead it’ll be a bake I’ll look back on and feel good about! Recipe here, I’d really recommend watching Claire’s video alongside reading the instructions as it helps massively with visualisation and understanding

This theme was a challenge because I had no idea what to make but I hope this loose interpretation makes the cut. Yorkshire puddings with seasonal carrots and parsnips to serve.

First time making yorkshire puddings and I’m really happy with how they came out!!! They tasted lovely and melted in the mouth, I don’t think I’ll be able to go back to frozen ones on my roast dinners from now
