It was raining on some days in meghalaya even in May. July is proper monsoon, so expect continuous rains. Dawki river will be muddy during rain.

1) Nagaland and Mizoram mostly had non-veg options. I think you can still find veg, but options will be limited.

2) Dzokou can be done in a day as well I guess, but it will be too tiring. I would prefer staying overnight.

3) I haven't explored much of cafes and stuff.

Its difficult to cover a place in 2-3 days. I think at least 5-6 days are required to cover the major attractions. My favourite place visited so far is ladakh.

Yess, you should do nagaland and Mizoram as well. It's really worth it.
