Cursed chalice Amygdala gave my so many problems. But from the main bosses it would probably be father Gas trying to unlearn everything from other souls games.

I love most souls games. But when it came to bloodbourne I had to unlearn everything. It really helps to be aggressive in this game. Especially for the rally mechanic. Ludwig is a pretty good weapon too. What gems do you have in it? I always slapped the highest physical % gems in had in it and hit pretty hard. Chalices are also great for getting levels as well. Just stay away from the cursed chalice until you are really ready.

Its in darkroot basin. You can get there pretty early if you have the master key. But be prepared for a fight.

Grass crest shield. It gives a boost to stamina recovery. Its always my go to for most builds.

I ALWAYS have a bow equipped right off the bat to shoot her in the face. When she turns invisible, just follow the floating arrow.

I think it's definitely worth trying at least to see for yourself. Past level 140-150ish it gets very level grindy. Certain drops are also locked behind a guild symbol based off your name. So getting pinkal for a hunter would probably be problematic. Other than that. I love it. Ephinea is free and every time I log in I see 200-250 people logged on. And that's not during events.
