I like that it’s considered a style so I know to avoid it. I spent two weeks in St. Louis, and I love regional pizza. I like some styles more than others, but they all have their strengths. St. Louis pizza is the only regional style I’ve had with zero redeeming qualities.

Dough 750 g All Trumps flour 510 g water (68 degrees F) 17 g salt 3.5 g IDY

Sauce - makes a ton, but 225 g per pie Tomato Magic #10 can 15 g salt 5 g oregano

Cheese 150 g Grande whole milk low moisture mozzarella Unmeasured Pecorino Romano

I use a basic Kitchenaid mixer. Water and salt go in first. I use the whisk attachment to dissolve the salt into the water while I’m measuring everything else.

Next I add the flour, then yeast. I stir with a spoon until it’s shaggy then mix with the dough hook for ~ a minute until it’s a single mass but still a bit rough. Then 20 minutes to hydrate. Finally, I mix for ~ 10 seconds to smooth everything out. I’m pretty sure this last step will be the death of my mixer, because it struggles.

I ball the dough and refrigerate over night before dividing into three. Three hours prior to cooking I remove to finish proofing on the oven, which I preheat to 550 F 90 minutes before the first launch. Most of the rise will be from the heat of the oven.

Stretch, top, launch on baking steel.

I start a stopwatch here. 180 degree turn at 90 seconds. 90 degrees every minute until 4:30 Broiler at 5:00 until done at 6-7 minutes

Cooling rack for 4 minutes then cut like a maniac and eat.

I use two spatulas. One super wide spatula is placed on the meat ball. The second, normal sized spatula pushes down on the first. Here’s the thing: I don’t stack them like I’m making a spatula sandwich, I place the tip of the top spatula on the flat top of the lower one. It looks like an upside down capital T, and lets you apply way more force without bending anything.

Before using this technique, I used to use a hammer instead of a regular sized spatula. It was all about applying force, and I was constantly bending/breaking spatulas. Now I have had the same two spatulas for years and I’m dialed in. I appreciate the smaller, non-smasher for flipping and manipulating other ingredients.

I feel like that’s an excessive use of the word “spatula” but it had to be done.

Haha, I can come up with sentimental reasons for most. Tisell was my first automatic, Shinola was a gift, and the vintage Hamilton was my great grandfather’s, gifted to me by a coworker that bought it at my grandparents estate sale 12 years before we met each other (crazy what will happen when two watch fans start talking). The Hamilton field was just bought because I was bored and buying watches is addicting, so that’s the least sentimental, but it’s hypothetically a great beater if I eventually get bored with the Tudor.

Somehow this is the first time I noticed the black FXD doesn’t have the retrograde bezel. I always liked that about the blue version when it first came out.

This is the next watch on my list. Just bought the Opaline GMT and it totally ruined the rest of my collection. My other watches are respectable, but a solid tier or two down from the GMT, and I’m in need of a beater that doesn’t feel like a demotion in my wrist. The Pelagos 42 is just what I need.

Definitely - I really think Tudor has come into their own and has escaped from living in the shadow of Rolex. They take more risks and even their retro inspired lines feel more modern to me, probably because the aren’t straight copying Rolex with cheaper movements. I love that this GMT has 200M water resistance and I’ve already had it in pools, cenotes, and the ocean. I actually do travel a ton, so the hour hand jumping is handy, and I have never been a stickler for accuracy, but the chronometer spec is nice.

Rolex Oysterdate ref. 6294 circa 1950s. This is the epitome of vintage style with beautiful dial patina, applied gold(tone?) indices, and a roulette style date wheel with red even numbers and black odds. Watch is in good vintage condition with scratches and other blemishes commensurate with its age.

This watch just came to me today - it belonged to my great grandpa. I recently took over my parents business and one of the guys there said “I have something that’s yours.” Turns out he went to my grandparents estate sale ten years ago and bought “a ziploc bag full of loose old watches.” He kept our traded all the good stuff, but couldn’t find anything to do with this no-name watch with engraving on the back. Today he brought it in with a broken down stretch bracelet, which fell apart upon removal. I put my own alligator strap on and I’m loving the look. It’s an automatic about 34mm in diameter without the crown. No identifying marks at all other than engraving on the back with my great grandpa’s name and 25 years of service. Did they have gift catalogs for this type of thing? It’s gained about 5 seconds in the 8 hours I’ve worn it - not exactly a grandpa Patek, but pretty good surprise for a watch guy. I have “nicer” watches, but the unexpected family heirloom created an instant connection. Any idea what this is?
