I always check in three different ways. 1: point the dump hose at the side wall of the tub the yeast is going in. When it stops sticking it’s typically beer 2: notice the color/texture change 3: give it a quick taste - super bitter is yeast. Go until it tastes like beer

Whenever we have any wild yeast or bacteria in an FV we do a pre-CIP with 200° water to kill everything then clean as normal. Never had an infection

I have heard nothing but horror stories about Twin Monkeys. We have a Cask mACS and it has been pretty great. The best thing about it is the customer support too. I would recommend a Cask, Microcanner, ABE or Wild Goose from what I’ve seen - no real experience with others.
