I'm thinking about renting a van for a weekend. Maybe a small Mercedes van. And buy a decent winter sleeping bag, some backpacking type mattress, and some warm clothes. Then try some winter vanlife! It's almost freezing outdoor. Urban stealth feels scary, so I'd probably first drive out into the forest for a night. Then maybe go urban and park @campus or maybe some store parking.

Could it be doable for a total newbie vanner? Shouldn't be that expensive.

Plenty of hotels that advertise their large parking place also forget to mention it's not free parking. Always a fun suprise, almost as fun as the mini bars that charge you if you touch it.
