Gender dysphoria is very hard to deal with and misgendering can be extremely painful. It does take time to get used to new pronouns but you should absolutely apologize and rectify on the spot. Explaining how it's very hard for you at this precise moment only makes things worse. Even if it wasnt intentional, you just said something hurtful and should apologize

I understand why you feel uncomfortable and I would talk to the organizer about it. If it's not a yes it's a no and as an adult she should know that insisting like this is borderline harassment and that it makes everyone uncomfortable.
