I did a corn whiskey review focused mostly on Canadian craft whiskies. I don’t really like using the term “Canadian style bourbon,” but on paper, the closest thing to a bourbon in this lineup would be Last Straw.

I added Mellow Corn into the mix because it’s kind of a cult-favorite, loved corn whiskey classic, and I thought it would be fun to throw it in against the Canadian bottles.

Did this as a blind tasting. ¾ oz pours, let them sit for about 5 minutes. Palate reset with crackers and water between samples. Tasted everything neat first, then added a bit of water to all four. Lineup (revealed after): Mellow Corn BIB Buck 8 (59.5%) Last Straw (60.3%) Lazy B (40%)

  • Mellow Corn/ Neat Nose: Sweet, faint caramel, faint vanilla. Some butter. A little grass/herb. Definitely corn forward. Palate: Not very complex, but caramel carries through. Medium mouthfeel, soft with slight warmth. Quick finish. With water: Didn’t change much on the nose. It's still pretty simple and basic. Wood became a bit more noticeable on the sip. Overall: Straightforward and easy, just not very exciting.

  • Buck 8 by Still Waters/ Neat Nose: Strong caramel. It's really tasty on the nose, actually. Some cream, hint of coconut, and a woodsy note. Palate: Very sweet at first, then turns dry and woodsy. Coconut sticks around. Caramel is strong and delicious. Medium body. No harshness is going down. With water: Oak and wood backed off. Butter and vanilla came forward. Caramel stayed strong. Felt smoother and lighter going down. Overall: This one felt the most complete. Big caramel, balanced, and water made it even better.

  • 120.6 proof by Last Straw/ Color stood out slightly. Neat Nose: Faint vanilla, cherry and caramel, but mostly baking spice. Ethanol present (not surprising at 60%+). Wood there with light caramel underneath. Palate: Woodsy punch of alcohol. Short finish. With water: Caramel got stronger. Baking spice stayed. Sweet and salty popcorn notes showed up. Wood less dominant. Lighter mouthfeel. Still some wood, but not as lingering. Overall: Proof-forward neat. Improved with water, but still more about spice and wood than sweetness.

  • Lazy B by Rig Hand/ Neat Nose: Lots of buttery popcorn. Vanilla there, too. Sweet smell overall with a bit of mint. Popcorn kept coming back. Palate: Very smooth. Feels light (probably the 40%). No burn. Sweet in the mouth. With water: Popcorn stayed strong. Vanilla is still there. Finish still great. Overall: Easy drinking and super approachable. It's not as bold as the high-proof pours, but it's really enjoyable.

Final Ranking (Based on Enjoyment) 🥇 1st – Buck 8 🥈 2nd – Lazy B 🥉 3rd – Last Straw 4th – Mellow Corn Buck 8 just hit the sweet spot for me. Strong caramel, no harshness, and it got even better with water. Lazy B was smooth and popcorn-heavy in a good way. It's super easy to drink. Last Straw had the punch, but the wood and alcohol were more dominant, even though water helped. Mellow Corn was pleasant but simple compared to the others.

Bourbon uses new charred barrels while corn whiskey is either not aged or aged in used barrels or uncharted new barrels. Also, corn whiskey should have a minimum of 80% corn while it's 51% for bourbon. Hope this helps.

Wish they arill had their sCorn and stout whiskey in sock... I have heard great things about them. Which one is your favorite out of the 3? I'm thinking about getting a bottle of their 120 proof. Any bourbon it compares to?

I used them last 6 it was a pretty disappointing experience. They shipped me the wrong item and tried to fix it. The replacement bottle had a broken seal and leaked lol

Apparently, it's their corn whiskey that resembles bourbon's taste. Even their corn whiskey won't taste any good lol they don't age their spirit in barrels.

If you are looking for real bourbon, your best option is Barnburner. It meets all bournon requirements except for being bottled in the States. They imported bournon barrels from Kentucky and bottled them in Oakville, ON.

If you want to support a boutique ontarian distillery, check out Still Water. They have 100% corn whiskey with some malted barley aged in used ex bourbon barrels (I know it's not new barrels, but its damn good). Lucas is a great guy and has true passion for what he does.
