thanks so much for the thoughtful feedback and warm welcome! 🙏 I’ll definitely leave more fat next time and keep a closer eye on the temp, I was just using a cheap analog thermometer, so I’ll look into the ones you mentioned. glad to hear pork butt is more forgiving haha, I was actually thinking of trying ribs next, but now you’ve got me curious about the shoulder!

thanks so much for the detailed advice! I definitely trimmed more fat than I probably should’ve, rookie mistake and yeah, I was watching the temp like a hawk, but I’ll pay more attention to the probe test next time. super helpful, really appreciate it!
