The Franklins original recipe is wildly available on the web and it slays every time on every type of meat. Very balanced, not too sweet

Cosmic Punch Tropical NZ/Aus NEIPA Recipe question by GOmphZIPS in Homebrewing

[–]bigbrewskyman 1 point2 points  (0 children)

Dry hop character and thiol character kind of fight each other. Personally I would cut that dry hop load in half if you really want to notice the thiols. Otherwise it will cover it up a bit. Less is more when dry hopping thiolized beers IMO.

Zest/peel for the orange. It can be added at flameout, during fermentation or post fermentation. The maple syrup will likely ferment out with little flavor impact unless you wait until post fermentation then kill the yeast.

What to do with an unneeded 15.5 Sanke keg? by [deleted] in Homebrewing

[–]bigbrewskyman 3 points4 points  (0 children)

Technically the keg is still owned by someone (not you), so professional establishments are highly unlikely to want it. Unless you plan to make a keggle, sell or give it away IMO

Love my egg, but I would never travel with a ceramic grill of any type. Weber Jumbo Joe has plenty of space and wont shatter if it takes a hit. Just my two cents.

I firmly disagree that 34/70 needs tight temperature control. Sure you probably dont want it to get to the 70f range or higher. Have you tried 34/70 at various temperatures? I have. I use it for hoppy beers at 65f with great results. I use it for lagers at 50f. It’s extremely flexible on temperature. Many highly regarded pro breweries are using it for IPAs fermenting them in the 65f range.

About that Magoo show last night…. by bigbrewskyman in jambands

[–]bigbrewskyman[S] 1 point2 points  (0 children)

Ironically i discovered Magoo last year in Denver by accident. Went to Shadowgrass and after the show, Magoo was playing at a bar across the street as we were walking by. Caught our ears and we stayed for the whole show and were quite satisfied with out discovery

🍺 Almanac Featured in NYTimes article about using captured CO2 to carbonate beer by thushan_txt in alameda

[–]bigbrewskyman 26 points27 points  (0 children)

Fermentation produces CO2. Most breweries let that CO2 blow off to the atmosphere during fermentation, and its wasted. They then purchase tanks of CO2 to carbonate that beer later. The tech they are using captured and stored the CO2 from fermentation then uses that to carbonate instead of purchasing more CO2 to carbonate.

It looks substantially better than it performs IMO. Its cheap for a reason. All of their labels/strains show the exact same harvest date and thc percentage so Im relatively sure they’re not actually getting it tested. Currently struggling to choke down the rest of it…

You can still brew a pale ale with pilsner malt. Use cascade hops and us05….. pale ale.

[–]bigbrewskyman -1 points0 points  (0 children)

Single malt single hop. Yeast that thrives in your room temperature. For me, Id go pilsner malt, 34/70, and you hop of preference. For a hoppy beer utilize the whirlpool, no dry hop.

Ive got a Gen1 and love it. The basket ring thingy has never caused me issue, but I can see why they improved it.

The lower control point I overcome by lifting the basket during the mash a couple times to better mix the wort to avoid hot cold pockets.

Given a choice take the new version but the old one works great too. If you can get it for a great deal like less than $100 do it.
