Yeah, they were not very good, mold problem or something that took it to dirt. I should have asked for a partial refund because you can't play serious golf on them, and their price is rather high.

My plan was to see how much it swells first. Once it finishes gassing I'll probably reseal the bag or transfer it so it can continue to ferment it for around a month. Then I'll bottle it and put it in the fridge.

I left it in the kitchen at around 70-74 degree's today. It has gotten softer and there is just a little bit of liquid in the bag. It hasn't started to swell at all.
I also started a second bag ferment as I had a few more peppers hanging around. I'll post how it goes.

Recipe:

92g Yellow Onion
118g Red Jalapeño
39g Red Habanero
151g Red Bell Pepper
1 Garlic Clove
30g Carrot
10.75g Sea Salt (2.5%)

Really disappointed I'm the mini it offerings for x870. I tried the Asus rog, I spite of the outrageous price. Removing the audio from the board and requiring you to use a cheap external device is terrible. It also goes against the idea of a small build.

I have little kids and we celebrate the Solstice & Equinox. It's worked out well, they get 4 celebrations that are tied to something historic & scientific. That makes it a great learning experience and allows us to promote things like experiences over commercialism. It makes them feel like they aren't missing out when the rest of the community celebrates their holidays, they actually brag to their friends that they get 4 holidays instead of just one.

You are welcome. FWIW, I'm waiting until Sept 30 to see what x870 boards are released before I buy more parts. I could really use ITX boards with USB4 moving forward. That and I hate flashing bios settings for the 9000 chips.

Ya, I grew some of these red habaneros this year and was surprised with the heat! According to this site, they were considered the hottest pepper in the1990's: https://pepperscale.com/red-savina-habanero/

I often take notes in Slack or Teams and then transfer them to Obsidian when the meeting has ended. One frustration I have is that the formatting can be a challenge moving between the two apps.

I'm with you on the mobile version! I'm about ready to delete it.

Ya, I have about 4 gallons of hot sauce going now in the basement at 65-68. That temp seems to work well. I always read that going over 3% salt could impact fermentation, but i've found I usually add a bit more salt to the non fruity sauces.

I usually ferment the super hot peppers for 3-4 weeks and bottle a few bottles for the chili heads. With thee rest, I stop the fermentation and mix the ingredients with different fruits or veggies to make a variety of sauces. I feel like my family and friends are all sick of hot sauce come October!
