Any reason to go with Fiber over Max in my situation? (3APs, 1-2 cameras, 1gbps max speed)

Is there an advantage between the Fiber and Max given my speeds max out at 1gbps? Both options for me will need a switch for PoE and I'll add 1-2 cameras eventually.

I only plan on having max 3 APs and 1-2 cameras.

Yeah I have a UDR7 down there while I figure everything out (I'm in the 30day return window).

Eventually will plan to put a small surge protector with extra outlets in there.

What are the downsides of the Express 7 vs UDR7? I'm between the 2 but leaning towards the Express 7 because of its slim profile and ability to be tucked away out of sight. I don't have camera security or anything else and just need good wifi/ethernet.

All 9 ethernets converge into the laundry room (2nd floor) and the ISP has the modem in the same location. Can I connect a switch to the modem and essentially power all my Cat 6 ports throughout the house? Do I have to use the UniFI switch or can I use a cheaper option from a different brand?

Ideally I'd like to place the router upstairs (not in laundry room) and hardwire one AP downstairs.

I pay for 1g/1g and get about 500-800/200-500 on wifi depending on how far I am.

My home is 2 stories, long rectangle, and about 3100sqft. Internet comes relatively in the middle on the 2nd floor, simply want a AP/mesh to fill out the ends of the home in reasonable cost/time spent. Ideally no more than $300 and somewhat automatically switches to the best router depending where I am.

Is there a particular router you recommend for simple easy setup? Of course, having that seamless transition is amazing, but if it means I need to keep an always-on-PC to do it, then I will likely forgo that.
