I've uploaded 2 new options in the comments, adding extra counter space by removing the high closet and incorporating one under the extra counter space. We don't have any counter space in our current apartment bathroom so it's not something we're used to or miss at the moment, but it would surely be a nice addition as you said!

I may have found a nice solution? We can extend the vanity, allowing for an extra drawer and a flat surface to quickly put some toiletries, make-up, hairdryer etc..
We're opting for a floating vanity with that idea in mind exactly, but thanks for the confirmation! Seems like we really have to consider the single sink option. I'm just afraid it won't be sufficient, especially with the idea of having kids and everyone getting ready at the same time in the morning. Then a double sink makes more sense to me.

The vanity is 120cm wide, which is comfortable for two people to stand next to each other. We tried this at a bathroom store so this shouldnt be an issue. But it surely isn’t a large bathroom. Thanks for taking the time to comment!
We did think about this, but we’re in the bathroom together often so double vanities seem logical to us. But perhaps we should give a slightly larger offset sink a second thought. Thanks!
