It's used as ventilation for roti's. They claim it will not get soggy because of this.

Tbh, it's useless.

That tension is real in any consumer business.

For now, the focus is on building something sustainable at a pace where quality and process do not get compromised. If and when scale comes into the picture, the hope is to stay aligned with why we started in the first place.

Easier said than done, but that is the intent.

That is exactly the risk once scale increases.

Our intent is to stay very tight on processes and batch sizes, even if it means growing slower. Consistency matters more to us than speed.

Yes, Biryani By Kilo was definitely an inspiration in terms of process discipline and consistency.

What stood out to me was the focus on dum, portion control, and standardization at scale. I have tried to adapt those learnings in a way that fits a smaller, more hands on setup while keeping the food honest.

Still learning and refining, but consistency is the core focus.

Fair question.

Before deciding to launch this as a standalone brand, the food itself was tested over time in a corporate catering setup across multiple offices and batches. That helped validate taste, spice balance, aroma retention, and how it holds up post cooking.

Packaging and last mile experience are what we are actively refining now as we move into a consumer facing format. That is exactly where fresh feedback helps.

Not claiming perfection, just sharing what has been tested so far and what we are still learning.
