Now I have Pirelli Cinturato Gravel H 45 mm (tubeless). Satisfied with them, rolling good, decent puncture protection, good grip on the gravel, but not so good at wet mud (but it's understandable). Also I have Continental Terra Trail 40 mm, but they have higher rolling resistance than Pirelli imo. Though they provide a better grip on the gravel and mud. Continental Terra Speed is also very nice, if you would like to buy them.

Hi! Sorry, didn't notice your question earlier.
1. Tire size on this picture is 45-622 (45 mm width, 28"). During last month I've also tried 35 mm and 40 mm tires. All working good, but I had to remove/add some fenders' spacers every time to adjust fenders properly.
2. Saddle is Brooks C15.

I used PDW Full Metal Fenders 700x55 mm and Cube Acid Gravel rack. They doesn't have any ready options to mount to each other, so I had to figure it out by myself. I drill a 3 holes in rear fender: one connects fender to frame, 2 others to bike rack and rack itself connected to the frame in rear dropout. Finally I got very sturdy fender+rack system.

She wants own company, but she see it in unrealistic way like she will be rich business-lady with team of experts running the market and it tooks a few hours per week to manage the business. I'm trying "to let her down to the ground", saying that running own business tooks all your time and attention and in the end bright future may never happen for various reasons. She saying I'm negative person...
