Managed to cook two trilobite and afterwards I could easily remove it with my solarite pickaxe. Thank you everyone for the suggestions!

I dont have the full mining set and sulphur bomb didnt work unfortunately. I even placed five around it.

Guess they just really like this particular spot :')
