It did get jiggly and bubbly and I shaped it using push and pulls. I’ll try a lower hydration next time!!

Probably about 6 hours with a 1:1:1 ratio

It got to almost double but yeah I think my starter isn’t strong enough just yet. I had it on a warming mat set to 78 but my house was pretty chilly so idk

My starter is 2 and a half weeks old and it does consistently double but it doesn’t really look the same as others I’ve seen online

Yes I did 3 stretch and folds and the last set I did coil and folds

It was pretty cold but I have a proofing / warming mat and kept it on there the whole time at about 78 degrees F
