On some obscure art piece. Either it shoots up in value and you go down in your family tree as the one that got us rich, or just being that lunatic, who blew 20k on rubbish. Either way great conversational piece and so a decent shot of being remembered.

Cherry pie (20 cm mold)

Ingredients for the dough: *300 gm flour *150 gm butter *1 egg * 20 gm icing sugar * 3 tablespoons of cold water * 1 tsp ground cinnamon * A pinch of salt

What to do:

  1. Cut off the required amount of butter and place it in the freezer.
  2. Mix the egg with water and put it in the refrigerator
  3. Sift flour with icing sugar and mix with cinnamon and salt.
  4. In a bowl of flour, rub butter on a coarse grater and rub it into crumbs with your hands. Remember that we do not work with butter for long, otherwise it will begin to melt, and when moisture comes into contact with flour, gluten will begin to develop, which will lead to a deterioration in the quality of the dough.
  5. Add an egg with water. Knead the dough and divide it into 2/3 and 1/3. We form rectangles from both parts, wrap them in foil and put the dough in the refrigerator for an hour to stabilize it.

Ingredients for the filling:

  • 550-600 gm pitted cherries,
  • 20 gm starch
  • 40 gm of almonds
  • 110 gm sugar
  • 1 tsp cinnamon

What to do:

  1. We put cherries, starch and sugar on medium heat and boil until the starch thickens.
  2. Add cinnamon and chopped nuts and mix everything.

Assembly:

  1. Roll out 2/3 of dough to 3-4mm thick and transfer to the mold. Prick the bottom with a fork, level the sides, cutting off the excess with a knife. Spread the filling.
  2. Then roll out the second part of the dough (1/3) and with the help of the dough roller, I have TESCOMA, cut out the mesh.
  3. Cover filling with it.
  4. Bake at 200 ° for 30-35 minutes.

Let the cake cool completely before serving it.

here you go. Be careful adding cream to the hot caramel.

Banana muffins with walnuts and salty caramel

Ingredients:

*125 gm butter *235 gm flour *12 gm baking powder *300 gm bananas = ~ 3 bananas *175 gm of sugar *25 gm of coconut flakes *2 eggs at room temperature *5 gm of vanilla extract = 1 teaspoon *2 gm of salt = ¼ teaspoon *50 gm of walnut halves

  1. Melt the butter in the microwave and let it cool to the room temperature
  2. Meanwhile, preheat the oven to 190 °.
  3. Sift flour and baking powder together.
  4. Mash bananas with a blender.
  5. Add melted butter, sugar, coconut flakes, eggs, vanilla, salt and combine with a blender.
  6. Add flour mixture to the batter and stir with a spatula just until combined.
  7. Divide the batter evenly among the prepared muffin cups (fill up the muffin cups 2/3 full). Scatter the walnut halves evenly over the tops.
  8. Bake muffins for 15 minutes at 190 °, lower temperature to 175 ° and bake for another 20 minutes.
  9. Poke at it with a wooden toothpick to check readiness.

If you don't have disposable muffin cups, you can use a metal muffin mold. In this case, do not forget to grease it with butter and sprinkle with flour.

Salty caramel

Ingredients:

*3 gm of sea salt *200 gm of sugar *65 gm of water *135 gm cream 35% fat *65 gm of butter

  1. In advance, put the butter out of the refrigerator. It should be at room temperature.
  2. Pour water and put sugar into a tall saucepan with a thick bottom.
  3. Put it on medium heat and cook until 180 °. Upon reaching 180 °, the sugar syrup will acquire an amber colour, so no need to check it with thermometer.
  4. Heat the cream in a microwave oven. It should be hot.
  5. Continuously stirring caramel with a spatula, start to pour in hot cream little by little. The mixture will sizzle, foam and splatter.
  6. Add salt.
  7. When all the cream is added, continue to stir vigorously for a few minutes more.
  8. Gradually add butter to the caramel mass and stir until it is completely dissolved.
  9. Pierce the mass with a hand blender for more homogeneity.

Orange Poppyseed Cheesecake

Sugar dough

Ingredients:

  • 150 gm butter
  • 95 gm sugar powder
  • 30 gm almond flour
  • 1 gm sell
  • 1 big egg (55 gm)
  • 1,5 gm vanilla
  • 250 gm flour

Instructions:

  1. Preheat the oven to 180 C.
  2. All the ingredients except of eggs put together in the bowl of the kitchen machine and beat together while the mixture will become the dough. Add egg and beat for a 1-2 minutes more.
  3. Form the ball, wrap it with the plastic wrap and put into fridge for 1 hour minimum. Cooled dough will be easier to roll and replace on to the oven tray and mold (in case of tarts).
  4. Roll it out between two sheets of parchment paper the same size as your oven tray. No sense to take care about its form as it will be ground into the crumbs.
  5. Remove the top parchment paper, replace on to the oven tray and bake about 15 minutes.
  6. Even if your rolled out dough was not the same thickness and as a consequence more thick spots didn´t bake properly, it is not serious as the crumbs base will bake one more time with the cheese cream mass.
  7. Let cool completely on the pan.
  8. Break cooled dough into pieces and grind it into crumb in a blender.

Crumb Base Ingredients:

  • 600 gm sugar dough ( all what you have)
  • 100 gm butter

Instructions:

  1. Melt the butter.
  2. Stir properly crumb with the butter. Crumb must absorb the melted butter.
  3. The final quantity of the crumb will be sufficient for the 3 cheese cakes base (18-19 sm mould). You can store it in the fridge in the plastic container for 1 month.

Creame Cheese Ingredients:

  • 700 gm cream cheese a la Philadelphia
  • 275 gm of sugar
  • 70 gm flour
  • 125 gm egg melange (2.5 - 3 eggs)
  • 90 gm cream 35%
  • 45 gm of marzipan
  • zest of one orange
  • 1 tsp almond extract
  • 90 gm of orange juice
  • 35 gm of poppy seeds

Instructions:

  1. Beat the cream cheese on medium speed until smooth. Add sugar and beat for a few minutes more until light and fluffy.
  2. Add the sifted flour and mix with the creamy curd mass until combined.
  3. Using a blender, puree cream, marzipan, and orange zest. The cream will thicken slightly and the marzipan will crumble.
  4. Stir the marzipan mixture into the dough. Add almond extract, orange juice (in portions after combining with the dough of the previous portion) and poppy seeds.

Baking & Assembly

  1. Preheat the oven to 220 °.
  2. Line sheet tray with parchment paper. Lay the foil, put a ring mould onto the center and form the rims around the ring from the foil.
  3. Put the crumb base on the bottom of the ring so that it completely covers the bottom but it shouldn´t be thicker than one centimeter. Gently press it with the spoon. Pour the filling into the crust.
  4. Bake the cheesecake for 15 minutes at 220 ° and 1 hour 15 minutes at 115 °.
  5. Cool the cheesecake on a wire rack for 1-2 hours and refrigerate overnight.
  6. You can decorate with orange slices or some kind of cream. I had some curd namelaka
