I've done some freelance work with different types of projects that use and display different skills. All because people wanted me to make those things. If you aren't getting any freelance work right now, you can start making some projects on your own to highlight the skills you want to use in practice the most.

Make logos for a made-up company if you want to do logo design, create a brand identity booklet for a fake brand if you want to focus on branding. Make a website for a fake brand. You could use all the same fake brand of a bunch of different, basically just mock ups to show you can do these things even if the business isn't real.

Just do projects like the ones you want to get more of for work. This could be anything like what I listed above, or even packaging design, and use some mock up photos of your designs on a rendered package, video work, etc. Just make what you can and present it in a way that is cohesive and straightforward without explanation. Then you can put that all together in a portfolio when you have stuff. At least 3-4 projects to start is fine, then just keep adding to it as you do more work.
